dinners, last week + first week of june

went camping last week, so only 2 dinners were at home. here's what we had (lots of pasta):

m  arugula and parmesan ravioli, salad
t  veggie burger + fries
w  chicken noodle soup, homemade bread (at friend lara's house)
th  burgers + pasta salad (camping)
f  chicken pesto pasta (camping)
s  out to dinner at "south" in leavenworth. had sweet potato enchiladas. pretty tasty.
s  chicken pesto pasta (back home)

here's what's on this week (can't believe it'll be june already!):

m  leftovers from lunch
t  chicken tortilla soup (the hominy makes this taste so authentic. it's delish!)
w  spaghetti + turkey meatballs, salad
th  sweet potato black bean enchiladas (did i mention how i sub greek yog for the sour cream + it tastes fantastic?)
f  chicken quinoa broccoli
s  leftovers

week of 5/15

wes's golf game was cancelled due to rain, so i didn't have a chance to make those lasagna rolls last week. therrrefore they reappear on this week's menu :) not sure what i'm going to fix myself that night--i'll tell you next week!

week of 5/9

today is the first week of wes's golf league which means i'll be on my own for dinner on wednesday nights. this week i'm planning on lasagna rolls and saving the leftovers for lunch. made turkey burgers instead of albondigas last week, so that's on the menu for this week.

m  orcchiette (instead of squash + leeks, i'm making it w/ zucchini + cannelini beans)
t  turkey albondigas
w  lasagna rolls or a variation of that recipe
th  chicken tortilla pie w/ tj's enchilada sauce instead of salsa + green chiles
f  pizza + salad

forgot to post this week. this is what we had/are having:

m  wes was out of town for work. i had a salmon burger and salad and broccoli.
t  ate appetizers at the tesla event
w  pizza casserole, salad
th  anniversary/birthday night out at ztejas
f  turkey burgers, fries
s  greek chicken pasta
s  chicken/black bean nachos

note: the pizza casserole was pretty good. a little eggy for my liking, though. i'd rather have pizza!
